PRODUCTION PROCESS

2. Breakdown Of Process

Preparation process phase of material for making of Brem Bali that is white soft rice and black soft rice is cleaned, hereinafter for white soft rice is done by soaking during 3 hour and black soft rice during 24 hours, existence of soaking difference between white soft rices and black soft rice because of quicker white soft rice permeates water from at black soft rice. After soaking process completed white soft rice counted 75% and black soft rice 25 % mingled to be cooked in boiler, after cooking mixture between white soft rices and black soft rice is made cool, and hereinafter fermentation process using tape yeast and fermentation [by] during 5 day. Hereinafter is done dissociation of dilution becoming dilution brem and tape, from dissociation which still in the form of tape dipress to get dilution and dregs where dregs applied as livestock food. Hereinafter between dilutions brem and tape is mingled then is done pasteurization warm-up of 80 oC during 30 minutes and then is made cool then is added yeast, hence there will be fermentation of phase II during 15 days forming alcohol, hereinafter ageing is done by during 6 month of until 2 year. Where before bottling is done by test quality of to know alcohol rate, sugar, microbe type and weight metals which still consisting, if had tested quality fufilled hence done sterilization then packing and brem ready to be marketed. Capacities produce of before happened Bali bomb that is 400 liter/hari, after the happening of Bali bomb II 200-300 liter/hari.
